Artichokes with croutons

Ingredients
  • 3 fresh artichokes
  • 500 g cooked white beans
  • ½ red onion, diced
  • 10 pitted black olives, halved
  • 1 slice of sourdough bread (or similar), diced
  • 4 sprigs of fresh thyme (leaves picked)
  • Extra virgin olive oil
  • Sherry vinegar
  • Sea salt
  • Freshly ground black pepper
Instructions
  1. Place a pot with about two fingers' depth of mineral water and a steamer basket over the heat.
  2. Dice the red onion and soak it in a 50/50 mixture of sherry vinegar and water.
  3. Peel and slice the artichokes into six half-moons each. Place them in the steamer basket and steam for five minutes. Reserve the steaming water.
  4. In a frying pan, brown the artichokes on both sides with a tablespoon of olive oil. Set aside.
  5. Blend half of the beans with the reserved artichoke steaming water until you have a smooth, almost liquid cream. Season with salt and pepper to taste.
  6. In the same frying pan with a tablespoon of oil, sauté the bread cubes with the thyme leaves until golden brown and crispy.
  7. In a bowl, combine the beans, drained red onion, artichokes, and black olives. Dress with olive oil, season with salt and pepper, and mix well. To serve, on a flat plate, spread the bean cream on the base, place the bean and artichoke mixture on top and decorate with the croutons and thyme leaves, both fried and fresh.
